Juicy BLT with Tomato and Chilli Jam, @koffsseatss

Brioche bread (sliced)

Tomato & Chilli Jam:

4 ripe plum British tomatoes /1 can of ripe plum tomatoes

2 red onions

Olive oil

2 chilli peppers

1 tsp black pepper

2 tsp pink himalayan salt

1 tsp garlic, minced

2 tsp brown sugar

2 tsp apple cider vinegar

Ginger (freshly grated)

1 tsp cinnamon

1 tsp soy sauce

Serves 2

Prep time: 40 minutes

Cook time: 20 minutes

Method

1. Using a saucepan, on medium heat, add in a drizzle of olive oil, chopped up red onions with a teaspoon of brown sugar - let it caramelize for 2 mins

2. Add in tomatoes and chilli peppers (chopped into smaller bits)

3. Next, add in the salt, black pepper, garlic, brown sugar, apple cider vinegar, ginger, soy sauce and cinnamon

4. Let simmer for 30 minutes, till it forms a consistent texture

5. Let it cool, then spoon into jars & save for later!

6. In a separate frying pan, fry pancetta (no oil) - drain once cooked on kitchen roll

7. Toast two slices of brioche bread, layer with tomato and chilli jam

8. Layer with lettuce & finally add pancetta & assemble and enjoy!
