Brie and tomato toast with honey, thyme and walnuts, by @lockdowncuisine_

INGREDIENTS2 slices sourdough bread2 tbsp butter200g Brie3 fresh sprigs thymeHoney, for drizzling30g walnuts, toasted3 heirloom or regular British tomatoesSalt and pepperOlive oil

2 slices sourdough bread

2 tbsp butter

200g Brie

3 fresh sprigs thyme

Honey, for drizzling

30g walnuts, toasted

3 heirloom or regular British tomatoes

Salt and pepper

Olive oil

Serves 2

Prep time: 5 minutes

Cook time: 10 minutes

Method

1. Pre-heat oven 230C

2. Place bread on a baking sheet and spread your butter over each slice

3. Place in the oven and toast for 2-4 minutes. Remove from the oven and place your brie on top along with your thyme

3. Place back into the oven and cook for a further 4-5 minutes until your brie has melted

4. Remove from the oven, sprinkle your toasted walnuts and drizzle over your honey

5. Top with tomatoes, lightly drizzle over olive oil and season with salt and pepper
