In conversation with author and chef Flora Shedden

This British Tomato Fortnight, we’re absolutely thrilled to be partnering with author, chef and former Great British Bake Off contestant Flora Shedden. We recently caught up with Flora to talk about her love of cooking – she also shared with us some great British tomato recipes.

Firstly, what are your favourite ways to enjoy tasty British toms?

I am a big fan of going simple on top of good sourdough toast, with lots of olive oil and salt.

But when it comes to cooking them, I really don't think they need long. Stirred quickly into pasta sauces or roasted lightly and spooned over yoghurt or whipped feta they are delicious and carry loads of flavour when treated well.

What does seasonality mean to you?

I love cooking seasonally because it means you are never bored. There is always the next thing to look forward too and make the most of whilst its good and fresh.

We’re interested to know what sparked your interest in cooking and baking?

I grew up in a house full of cooks so there was no escaping it really. It was the done thing in my family and there is nothing more satisfying than feeding someone you love.

Your book ‘Gatherings’ celebrates dining with loved ones, how do you think cooking and sharing food brings people together?

I think cooking for a crowd is a lovely way to bring people together. It shows you are thinking of them and gives everyone some common ground to bring them together.

What inspires you when cooking?

Anything that tastes good right now. I start with that and then go from there.

I am fortunate enough to have a big cookbook collection and I love choosing recipes that appeal to me and then adapting them to work with what I have.

Alfresco dinner outside or a cosy candle-lit dinner in the kitchen?

Both! But in scotland we use a lot more candles and blankets than most (outside and in!)
